Now that summer if finally upon us, there is a great diversity of locally grown fruit

and vegetables available. For those of us that enjoy a bit of foraging, marsh

samphire is now at its best. For those less willing to squelch in the mud to collect 

samphire you can purchase it in some supermarkets or your local fishmonger. 

Samphire is the perfect complement to fish or even meat dishes with its slightly 

salty taste. 

Samphire only requires light cooking, either boil or steam for 2-3 minutes and sprinkle with pepper and a squeeze of lemon. There is no need to add any salt.

As well as a side dish for fish or meat, samphire can be served in salads or adding to an omelette.

Samphire is high in fibre and rich in vitamins A, C, B2, and D as well as having high levels of Iodine, iron, calcium, magnesium, zinc and manganese
